How AI reservations actually work

A guest opens a chat (on your website, your widget, or any embed) and just says what they want: "Saturday 7pm for four, anniversary dinner." The agent confirms it understood, asks for the few things it needs (name, contact), checks your floor plan and capacity rules, and books the table.

Every booking gets a confirmation number. The guest can come back later — even months later — and say "I need to move my anniversary booking" and the agent looks it up and updates it.

The key difference vs old-school chatbots: AI agents handle the long tail naturally. Interruptions, modifications, dietary requirements, table preferences — all in one conversation.

What limits should I know about?

AI reservation systems are extremely good at conversational text. They are not yet as strong at voice/phone — most platforms (including ours) do not yet handle phone reservations because the speech-to-text + tone-of-voice layer is still maturing.

They also depend on you setting up your operating rules correctly. If your floor plan is wrong, the agent will book against the wrong floor plan. The good news: most platforms make this setup take under an hour.

How does it compare to OpenTable or Resy?

OpenTable, Resy, SevenRooms, and Tock are marketplaces. They list your restaurant alongside competitors and charge per-cover commissions. AI agents like Aedan Rose run on your own channels — no marketplace, no per-cover fee, no upselling competitor restaurants to your guests.

The trade-off: marketplaces give you a discovery network out of the box. Direct-AI gives you margin and a guest relationship you own. Many restaurants run both for a while.
